Chicken Cheese Bread





Ingredients for Bread:

All-purpose flour 2 cup
Sugar 2 tbsp
Instant yeast ½ tbsp
Salt ½ tsp
Milk powder 2 tbsp
Oil 2 tbsp
Egg 1
Lukewarm milk to knead (almost ½ cup)


Method:
  1. Mix all the ingredients in the list in a clean bowl, except milk. Knead with lukewarm milk, until the dough is soft and little sticky. 
  2. Cover with cling/foil and let it rise for an hour. Knead the dough again with 1 tbsp all-purpose flour, after it's risen.



Ingredients for Filling:

Chicken boneless 250 grams (small cubes)
Salt 1 tsp
Red chili flakes 1 tsp
Black pepper 1 tsp
Worcestershire sauce 1 tbsp
Oil 2 tbsp
Garlic 1 clove (finely chopped)
Onion 1 medium (small cubes)


Method:
  1. Heat the oil in a nonstick pan, add the chicken, saute till it's cooked through.
  2. Add the chopped garlic, and rest of the spices. Cook for at least 2-3 minutes more.
  3. Add onion, saute for a minute and remove from stove, let it cool.



To assemble:

Coriander leaves chopped ¼ cup
Cheddar cheese (shredded) 1 cup
Egg beaten 1
Sesame seeds (optional)


How to assemble:
  1. Divide the dough into small balls. Roll it into medium round shape.
  2. Put shredded cheese, cooked filling, coriander leaves in the center and fold each side so they overlap each other. Pinch both sides of the roll. 




3. Grease the baking tray with oil, put the breads on it. Brush top with beaten egg, sprinkle sesame seed and give pattern with the back of your knife. Cover and leave it for half an hour.  




4. Preheat oven on 200° C. Bake the breads for 15-20 minutes or till it is golden in color.


This recipe yields: 8 small bread, and one 10 inch loaf!

Kitkat Barrel Cake [pictures]





My love for baking is huge. I thought of sharing this cake with you all, I made on my brother's birthday last month, it turned out irresistible. It is VERY easy to make.


All you need to do is make butter or sponge cake, I made chocolate fudge frosting (you can make any buttercream/frosting of your choice), make walls of Kitkat, fill in with your favorite candies. I used Galaxy Counters. And tadaa! :D

Cake Rusks



Ingredients:

Butter 100 grams
Eggs 3
All-purpose flour (maida) 8 tbsp
Baking powder 1 tsp
Caster sugar 8 tbsp leveled 
Vanilla essence 1 tsp


Method:
  1. Preheat oven at 180° C. Sieve all-purpose flour and baking powder thrice in a bowl.
  2. In a clean separate bowl, beat butter, vanilla essence and caster sugar till creamy. 
  3. Now beat on low speed and add egg one at a time followed by 1 tbsp of sieved all-purpose flour and baking powder. 
  4. Grease a 8 by 8 square baking tray with oil, dust it with the flour. Pour the batter in it and let it bake for 15-18 minutes till done.
  5. When cooled, slice it into long, thick pieces. 
  6. Preheat the oven again on 200° C. Arrange the rusks in single layers on baking sheet, bake for another 15-20 minutes or until all moisture dries up. Cool and store in a airtight container. 
  7. Serve with tea! :D



Yields: 20 rusks.

Chocolate Chip Oatmeal Cookies






Ingredients:

Butter 100 grams
Brown sugar 6 tbsp
Egg 1
Flour ¾ cup
Baking soda ½ tsp leveled
Salt a pinch
Chocolate chips ½ cup
Quaker oatmeal 1 cup
Walnuts crushed ½ cup
Vanilla essence 1 tsp

Method:

  1. Preheat oven at 200° degree. 
  2. Sieve flour and baking soda thrice. Keep aside. 
  3. Now in a large bowl, beat butter and brown sugar until creamy. 
  4. Add egg and vanilla essence. Beat until combined well. 
  5. Mix sieved flour, baking soda and salt with the help of spatula. 
  6. Fold in crushed walnuts, chocolate chips, and oatmeal. 
  7. Drop the mixture by rounded tablespoons about 2 inches apart onto ungreased cookie sheet.
  8. Bake for 10-12 minutes or until golden brown. 
  9. When baked, allow cookies to cool completely on baking sheet for 5 minutes, now transfer them on wire rack to cool completely.

Garlic Bread


It's warm, it's buttery, and you can taste garlic in every bite of it. This Garlic Bread is simply irresistible! 




Ingredients:

French loaf 1
Butter 50 grams (softened)
Garlic paste 1 tsp heapedSalt a pinch
Parsley 1-2 tbsp (fresh, if available)
Fresh crushed black pepper ¼ tsp
Oregano to sprinkle
Mozerella/Chedder cheese as required


Method:
  1. Preheat oven at 200°C.
  2. Cut the french loaf into 1 or 2 inches thick slices.
  3. Mix butter, garlic paste, salt, crushed black pepper, and fresh parsley together in a small bowl.
  4. Spread the generous amount of mixture on each slices, top with cheese. 
  5. Sprinkle oregano leaves. And bake it for 5-6 minutes until golden brown in color and cheese is melted. 
  6. Serve immediately.

Mini Chocolate Brownies with Fudge


Any festival or a happy occasions is nothing without 'sweets'. Eid-ul-Fitr is one of that happy occasions when you have more sweets than food or snacks on your serving table. This eid, I decided to make Mini brownies for all the guests. So before we start the recipe..

Belated Eid Mubarak Everyone! :) 




For brownies you will need:

Oil ½ cup
All-purpose flour 1 cup
Baking powder ½ tsp
Cocoa powder 2 tbsp heaped
Caster sugar ½ cup
Eggs 2 (room temperature)
Vanilla essence ½ tsp
Milk 2-3 tbsp


Ingredients for Fudge:

Cooking chocolate 200 grams
Cream 1 tbsp


Method:
  1. Preheat oven at 180° C.
  2. Beat oil, caster sugar and eggs together until they are combined. 
  3. Sieve all-purpose flour, baking powder and cocoa powder thrice, now add sieved dry ingredients gradually in the egg mixture. 
  4. Keep beating on medium-low speed. 
  5. Now add vanilla essence and the milk, mix well with the spatula. 
  6. Grease 8'' square baking pan with oil or butter, dust with all-purpose flour. 
  7. Pour the mixture in the pan. 
  8. Bake for 15-20 minutes. 
  9. Insert a toothpick to check if it's completely baked or not. Keep aside until it is completely cool.



Method for Fudge:
  1. Melt the cooking chocolate on double boiled on low flame. 
  2. When the chocolate is completely melted, add 1 tbsp of cream and mix with the spoon. 
  3. Spread this mixture immediately on the baked brownies. 
  4. Make it even with knife or icing spatula. 
  5. Let it set for at least 15 minutes in room temperature. 
  6. Cut it into mini squares or any shape you desire. 



Yields: 25 mini squares

Lemon Sour Cream Cake







Ingredients:
Butter 175 grams

All-Purpose flour 1 1/2 cup
Caster sugar 1 cup


Buttermilk 1/4 cup
Baking powder 1/2 tsp
Salt 1/2 tsp
Lemon juice 3 tbsp
Lemon zest 1 tsp (Grate 1 large lemon skin only)
Eggs 3
Yellow color 2 drops


Method:
Sift all-purpose flour and baking powder twice.


Beat butter and sugar till creamy texture.


Add eggs, one by one alternating with 1 tbsp of sifted flour and baking powder.


Now add buttermilk, yellow color, and the remaining sifted flour. Fold it with the spatula.


Grease ring mould or any 9 inch baking tray with butter, dust with flour. Pour the batter in it.


Bake it in preheated oven for 25-30 minutes on 180° C.


Dust it with icing sugar before serving.

How To Measure Ingredients For Baking


A friend of mine on Facebook has shared this amazing video with me yesterday, so I thought of sharing it on my blog as I found this video very informative.


I have noticed many people have disasters while baking. Friends, baking is a Science not an art. Accurate measurements is very important. Kindly invest your money in proper baking tools and utensils such as measuring spoons, cups and jugs.

Coconut Macaroons


INGREDIENTS:-

Sweetened condensed milk – 1 cup
Milk – 1/4 cup
All purpose flour – 1/4 cup
Sweetened shredded coconut – 2.5 cups


Optional:
Semolina (suji) – 3 tablespoons
Cashew nuts, broken into pieces – 1/4 cup
Cardamom powder – 1 teaspoon


METHOD:-

  1. Line a cookie sheet with parchment paper and preheat the oven to 350F (180C).
  2. In a large bowl, combine sweetened milk and milk, whisking until blended.
  3. With a wooden spoon, stir in flour, mixing until thoroughly blended.
  4. Stir in coconut, cashews and cardamom powder.
  5. After combining all the ingredients, the batter was a little bit watery. So I test baked just 1 tablespoon and the cookie spread so much.
  6. So I added 3 tablespoons of semolina (sooji/rava) to the batter and combined it well and now the batter was nice and firm. Again I test baked another tablespoon of the dough and the macaroon came out perfect.
  7. Then I went ahead and dropped tablespoonfuls of dough about 1 inch apart and baked it in the oven until it was golden around the edges (which approximately took 15 minutes). I got 24 (plus 2 test bake) macaroons for the above measurement.
  8. Cool for 10 minutes on the sheet. This point is very important. Don’t try to remove the macaroons from the sheet once it is out the oven because it will be very flimsy. 
  9. Again don’t put it back in the oven to harden it. Just leave the macaroons on the cookie sheet for 10 minutes and it will harden by itself. 
  10. Then transfer to a rack and cool completely.

Nankhatai


Nankhatai is a very popular Pakistani and Indian delicate crumbly biscuits. I watched this recipe by Tahira Mateen on TV. And tried for the first time ever yesterday, and to my surprise it turned out delicious. So thought of sharing this scrumptious recipe with you all.




Ingredients:
All purpose flour 1½ cup
Semolina ½ cup
Ghee 1 cup (melted)
Cardamom powder ½ tsp
Caster sugar 1 cup
Baking powder ½ tsp leveled
Milk few drops
Salt a pinch


Almonds (optional)
Egg 1 beaten (optional)


Method:

  1. Add enough ghee to combine all the dry ingredients, most likely you will use little less than one cup of ghee.
  2. Add 2-3 tbsp milk to soften the dough so it is malleable like a play dough.
  3. Immediately make little rounds with a very light hand and flatten them gently.
  4. Place them on a baking tray with enough space between each Nankhatai.
  5. Lightly brush each with beaten egg.
  6. Place almond skin facing up lightly to the Nankhatai. 
  7. You can use cherries, jam, or pistachio too.
  8. Bake them in preheated oven at 180° C for 15 to 18 minutes only.
  9.  Do not over cook or over brown them, these are very delicate and crumbly biscuits.
  10. To preserve them: Keep them in air tight container. These can be stored for 10-12 days.

Pizza Garlic Bread



Ingredients:

All Purpose Flour 2 cups
Salt 1/4 tsp
Sugar 1 tsp
Oil 2 tbsp
Yeast 1 tbsp
Powdered milk 2 tbsp
Lukewarm Water to knead


Paprika Powder 1/2 tsp
Garlic Paste 1 tsp
Dried Oregano to sprinkle on top


Method:

  1. Knead dough with all the above ingredients except garlic paste, paprika and oregano. Cover, and keep it aside to rise for an 40-45 minutes
  2. Spread it in a 10 inch greased pizza pan, press it with your fingers. 
  3. Spread garlic paste on top of it, sprinkle Paprika Powder & Oregano on top.
  4. Now bake it in preheated oven, for 15-20 minutes on 200° C.
  5. Serve it with Pasta or enjoy it as it is.

Mini Pizza Pies



Ingredients for Dough:
All Purpose Flour 2 cup
Castor Sugar 1 tsp
Milk powder 1 tbsp
Egg 1
Salt ½ tsp
Instant yeast 1 tsp

Oil 4 tbsp

Ingredients for Filling:

Capsicum finely chopped 3 tbsp
Onion chopped 3 tbsp
Tomato chopped 3 tbsp
Chicken boiled and shredded 1 cup
Flour 1 tbsp
Butter 1 tbsp
Salt ½ tsp
Black pepper ½ tsp
Mustard powder ½ tsp
Milk ¼ cup
Cheddar cheese grated ½ cup
Ketchup as required


Method for Dough:
Mix all purpose flour, sugar, salt, milk powder, yeast, egg, and oil in a bowl and knead it with lukewarm water into soft dough.


Leave to rise for 1/2 an hour.




Method for Filling:
Heat butter in a pan, add chopped onion fry till transparent, add salt, black pepper, mustard powder, chicken, now add flour and milk. Mix well, cook for 2 minutes add tomatoes and capsicum mix, and remove from stove. 


Now roll the dough to a big circle 1/2 inch thick, cut three inches round with cutter. Place each circle into a greased tart tray. Apply ketchup, chicken filling, sprinkle grated cheese on top. 






Bake it on 200° C in a preheated oven for 20-25 minutes.

Baked Chicken Finger


Baked Chicken Finger

Ingredients:
Chicken breasts 4 (cut into 3 thick strips each chicken breasts)
Salt 1 tsp
Black pepper powder 1 tsp
Vinegar 2 tbs
Chaat masala 1/2 tsp
Chili sauce 1 tsp
Garlic paste 1/2 tsp

Milk 1/2 cup
Corn crumbs or bread crumbs 1 cup
Coriander leaves 2 tbs chopped finely




Baked Chicken Finger


Method:
Marinate chicken with salt, black pepper powder, chat masala, vinegar, chili sauce, and garlic paste. Keep aside for 1/2 an hour.

Now mix corn crumbs and coriander leaves in a separate plate. Dip marinated chicken strips into milk, just for a second. Roll it immediately in crumbs and coriander leaves. Press it well with your hands. Do the same with all strips.

Now preheat oven at 190 C. Spray olive oil on baking tray, place the coated strips, spray olive oil on top too if desire. Now bake for 20-25 minutes. Turn the sides in half a way whilst baking.

Serve with chili garlic sauce, or any desire dip!


The sauce is chili garlic sauce (ready made)

Chocolate Brownies


This is one of the most easiest and yummiest brownies recipe I have. I simply love it, especially when it rains, brownies with coffee is all I crave for. Even without frosting or walnuts they taste delish.. I don't like walnuts in brownies so I made them w/o it. Though I'm adding in recipe the amount, in case if you want to add it.

They are fudgy, irresistible... and they just melts in your mouth. Even if you are not a very good cook, these brownies will come out Perfect.. 

A must try!

Ingredients:
Butter 100 grams
Cocoa powder 3 tbsp
Eggs 2
Granulated sugar 1 cup
All Purpose Flour 3/4 cup
Baking powder 1/4 tsp
Walnuts chopped 1/2 cup
Salt a pinch




Method:
  1. In a saucepan, melt butter and cocoa powder, keep stirring as it melts. Do not cook. Remove from stove.
  2. Beat eggs until light and fluffy, add sugar keep beating on medium speed for 4-5 minutes. 
  3. Sieve all purpose flour and baking powder twice, fold it in the eggs mixture. Add a pinch of salt.
  4. Add melted butter and cocoa powder. Mix well.
  5. Add chopped walnuts (take 1 tbsp flour from 3/4 cup and dust chopped walnuts with it) than fold.
  6. Pour this batter into greased 8*8 inch square pan. Bake in preheated oven at 180° C for about 18-20 minutes. 
  7. Keep checking after 15 minutes, in case if it's done early. My oven takes around 18-20 minutes approx. 
  8. Cut in squares and serve.
